Title: Salsa De Chile Guero

Yield: 8 Servings

4 Chiles gueros
1 Tomato, peeled & seeded
6 Sprigs cilantro, chopped
1 Small onion, chopped
1 Clove garlic, crushed
1 Canned serrano, chopped
3tbOil
1 Salt, pepper to taste
1 Pinch sugar

Simmer gueros in boiling water for 5 minutes. Drain, stem and seed. Puree with remaining ingredients. Cook in skillet, stirring constantly, 2-3 minutes. Makes 1 1/2 cups
